This is another thing that I make every Christmas without fail and have done ever since Nigella released her “Nigella Christmas” book back in 2008.
Just a quick note about the book, it is divine, it is the first book I get out when I start to think about planning this years’ Christmas. I would definitely recommend it to the enthusiastic home cook.
So, the rocky road. It is so simple. Melt some chocolate with butter and golden syrup on the hob, then let that cool, mix in amaretti biscuits, glace cherries (I don’t use glace I use Maraschino instead as I just LOVE them), brazil nuts (but again I replace them with almonds) and mini marshmallows.
And the AWESOME thing about it is that it freezes surprisingly well.
