Well I’ve not joined in on the blog with Mrs M for a while, though I have still been meal planning. I find it so much easier to stick to a diet and budget if I plan the meals on a Sunday. Then I can shop for the things we need on a Monday (most weeks) when Littlebit is at her Granny’s house.
This week looks like it’s going to be a bit different though because of the snow. We’ve not been out since Friday morning when the snow really set in. I know the main roads are all OK but our estate is like an ice rink, we see cars going sliding past our house almost every hour so we’ve not ventured out in the car. We have been out for walks and snow fun but that’s the extent of it. Luckily we have a local Co-op within 10 minutes walk in the snow and I stocked up on Friday and Monday. I didn’t “panic buy” as such but I did buy a few things to bung in the freezer, just in case.
Monday – pepper burger with glazed potatoes, carrots and onions
Tuesday – piri piri chicken
Wednesday – sausage casserole
Thursday – haddock kievs with mash and peas
Friday – gammon and pea risotto
Saturday – sweet and sour chicken
Sunday – pasta bake
Monday’s recipe is from my new found favourite chef Alex Mackay’s book Everybody Everyday. I’ll admit I’d not heard of Alex before my Mum and I saw him in the M&S kitchen at The BBC Good Food Show last year.
While watching his fun and engaging demonstration I instantly knew I wanted to buy his book as he just made everything so simple and talked a lot about his kids and cooking with them, which was something I wanted to start doing more of with Littlebit. I will be talking a lot more about Alex and his recipes in the weeks to come, he has very kindly given me permission to republish some of his recipes and I intend to start a cooking with kids linky on the blog. More to come on that soon.
